  • ½ kg beans
  • 1 onion
  • 1 carrot
  • 5 cloves
  • 2-3 sprigs fresh celery

For the sauce:

  • 4-5 cloves garlic
  • ½ kg fresh ripe tomatoes or 2 cans of peeled & chopped tomatoes
  • 80 ml olive oil
  • 1 bunch fresh parsley, finely chopped
  • Salt
  • Freshly ground pepper

Soak the beans on the previous night in clean water and on the following day drain them off.

Put them in a pot along with new clean water and parboil them over medium heat for ½ hour. Then drain them off again and throw the water.

Put them back in the pot with clean water and add the cloves, the carrots and the celery. Boil the beans over medium heat until softened. Drain them off, throwing away the water where boiled, and put them in an ovenproof dish.

Heat the oil in a saucepan and add the chopped onion until translucent. Add the chopped tomatoes and the garlic. Pour 2 cups of hot water and boil the sauce until it thickens and absorb all the water. Remove from heat and add salt, pepper and parsley.

Pour the sauce onto the Giant Beans and stir.

Place the food in the oven at 180 º C for about 1 hour. If necessary, occasionally, add some hot water.
