Giant beans with Lamb Main Dish
For 6 servings  
  • 2 kilos lamb loin
  • ½ kilo fresh spinach
  • 2 small branches rosemary
  • 2 tablespoons green pepper
  • 6-8 cloves of garlic
  • 3-4 green onions
  • salt

We wash the meat, dry it and pierce holes with a sharp knife in order to put in the garlic cloves. We clean the green onions and cut them into rings.

We heat 2-3 tablespoons of olive oil in a pan, saute the onions and the fine cut spinach for about 5 minutes. We add the boiled giant beans, the rosemary, salt and the green pepper. We stir, remove from the fire and spread out the mixture on an oven pan. On top we place the meat. We add salt and 2 glasses of water or vegetable broth. We cover the pan and cook the meal in 170 degrees celsius for 3-4 hours. If necessary, add some water. When the meal is ready leave it in the oven without the cover in order to obtain a nice color. The meal is served warm.

Tip: You can give a fresh and aromatic flavor to the dish, by adding 2 tablespoons of finely cut fresh dill just before serving.
