Tabbouleh with rice

Ingredients:

  • 1 cup BELLA rice
  • 3 ripe tomatoes (cut into cubes)
  • 2 bunches fresh parsley
  • 4-5 sprigs fresh mint, finely chopped
  • ½ bunch fresh chopped purslane
  • 5 green onions chopped
  • 80 gr. black raisins
  • 2 lemons (the juice)
  • 10 tablespoons olive oil
  • A pinch of cinnamon
  • Few lettuce leaves
  • Salt and pepper

Preparation

Boil the rice following the instructions and then drain it very well. Place it along a clean towel and press it well to absorb all its remaining water.

Put the rice in a bowl and add the tomatoes, the cucumber, the parsley and the mint. Afterwards add the scallions, the mint, the purslane and the raisins.

Beat the olive oil along with the lemon juice adding the cinnamon and then pepper and salt.

Pour it over the salad, mix it well with the salad and leave in the fridge at least half an hour before serving.

Taste the flavor to be quite lemony.
