Stuffed Zucchini Blossoms

Ingredients:

  • 30 fresh zucchini flowers
  • 150 gr. Fancy rice
  • 2 tablespoons black raisins
  • 1 onion, chopped
  • 3 sprigs fresh mint, chopped
  • ½ bunch fresh parsley, chopped
  • 4 fresh leaves leaved basil, chopped
  • 1 ripe tomato, grated
  • 1 small zucchini
  • 150 gr. virgin olive oil
  • Salt
  • Freshly ground pepper

Preparation

Gently open the petals of the flowers and remove the stamens using a knife or by hand, being careful not to skive the tender base of the flower.

Place the rice, the onion, the herbs and the raisins in a bowl. Grate the zucchini on a coarse grater and add them into the bowl. Add half of the oil, salt and pepper and stir very well.

Stuff the zucchini one by one, closing their tops and place them on a pan.  Add the fresh grated tomatoes and the other half of the oil. Sprinkle a little more salt and pepper.
