“Spring rolls” with fried rice

Ingredients:

  • ½ kg phyllo
  • 200 gr. Fino rice
  • 8 tablespoons extra virgin olive oil
  • 4 spring onions
  • 2 cloves garlic
  • 1 carrot
  • 80 gr. boiled peas
  • 4 tablespoons fresh chopped parsley
  • 100 gr. boiled ham, chopped
  • 150 gr. grated cheese
  • Salt

Preparation

Boil the rice following the instructions and drain it off.

Chop the onions; grate the carrot on a coarse grater. Then cook the peas for 5 minutes in salted water and after cooked strain it.

Add the onion and sauté over medium heat until translucent. Add the garlic and continue to sauté until the onion is golden. Add the carrot and the salt.

Mix well and sauté until they begin to soften. Remove the pan from the heat. Add the rice, the peas and the parsley. Finally, add the ham and the cheese. Combine the entire mixture with the rice.

Cut the phyllo sheets into strips. Brush each strip with some oil and place on the edge of each strip a spoonful of the filling prepared. Fold the strips into rolls, closing well the first side of each strip.

Place the rolls to pan one next to the other. Then sprinkle some water upon them and bake them over medium heat at 180 º C for 20-25 minutes, until they turn golden.

Serve them hot, as a snack, at any time during the day. Their taste fits perfectly with yogurt.
